Position Summary:

Reports directly to the Director, Innovation and Operations and is responsible for departments day-today operations; this includes the recipe management (update and maintain database, administration, and distribution. Updating and maintenance of all culinary operation Standard Operational Procedures (SOP); the scheduling and hiring of culinary management in cooperation with the Traveling Corp Exec. Chef and Senior Executive Chefs; understanding and following all culinary specifications, procedures and activities established by Royal Caribbean relating to food preparation onboard the ships and outer island facilities.

Essential Duties and Responsibilities:

  • Works with the Director, Innovation and Operations on specific culinary taskforce assignments. Participates and support the F&B department in all initiatives to achieve Culinary Excellence, Consistency and Quality.
  • Collaborates with operational stakeholders, develops recipes and innovative concepts and menus that meet departmental goals in food safety, wellness of our guest and crew, food sustainability, ethnic diversity, seasonality and fiscal responsibility.
  • Manages the overall administration and quality assurance of the food management system but not limited to; ingredients, recipes, menus, menu costing and operational SOPs.
  • Coordinates and makes corrections, recommendations, and if needed to assist with implementation of new menus, recipe cycles and SOPs.
  • Works closely with systems team to help manage food costs targets on a fleet-wide bases.
  • Assists with new product specification development including supporting bi-annual gold standard evaluations.
  • Conducts inspections of all aspects of food preparation on ships, including yield and butcher tests for assessing compliance and to ensure no wastage.
  • Manages the fleet culinary management schedule and finding/interviewing excellent candidates.
  • Assist in reinforcing corporate agreed upon parameters regarding promotions, disciplinary actions, rewards, and recognition and personal development and monitor senior chefs are monitoring these areas.
  • Manages the food matrix complimentary venues throughout the ship.
  • Stays current with industry food, equipment, operational and systems trends. Attends food and equipment shows as approved by Director, Innovation and Operations.
  • Coordinates the distribution to the fleet the department project manager.
  • Authority to make recommendations, lead change efforts, and lead projects on product and procedure development, while remaining within the guidelines of the departments.
  • Manages the product order process for food development, tests, recipes, merchandise food shots within budget.
  • Reviews product specifications for accuracy, quality and operational implications; coordinates and performs tasks to ensure new product support operation excellence.
  • Overseas and coordinates preparation and plating of food for marketing and F&B for in and off premise events.

Qualifications

  • Formal culinary education such as Culinary College Diploma, Culinary Certification, completed Apprenticeship program, etc. required.
  • Familiarity of corporate food procurement processes for hotel/resort/air/cruise industry or equivalent preferred.
  • Financial analysis and statistical reporting skills are required in addition to the candidates/knowledge of food identification and quality standards.
  • Must be able to create effective reports for generating to multi-levels of management.
  • Candidate must possess extensive knowledge of USPH and/or Food Safety regulations.
  • Extensive cruise industry or comparable large volume hotel, restaurant or food production industry required
  • Bachelor’s degree in food science or related discipline / experience preferred.
  • Demonstrated leadership capabilities. Superior verbal and written communications skills.
  • Exposure to international environments preferred.

Knowledge and Skills:

  • High degree of computer literacy along with highly advanced skills in the following: Word, Excel, PowerPoint, Project, Outlook and Project Management software.
  • Excellent interpersonal skills to communicate in a multicultural environment with all levels of employees and management. Ability to work in a fast-paced environment with multiple projects and priorities with changing deadlines and paths.
  • Bold thinker with ability to generate creative, actionable recommendations to increase revenue, reduce costs and/or improve operational performance, efficiencies and excellence.
  • Ability to analyze complex data, draw conclusions, develop appropriate action plans and execute them. Ability to grasp complex concepts quickly and independently.
  • Ability to solve complex problems with a variety of variables in situations where no standardization exists.
  • Knowledge of sustainability standards and applied nutrition.
